Gastronomik tatmin ve hatırda kalıcı gastronomi deneyiminin davranışsal niyet üzerine etkisinde destinasyon tatmininin rolü: Kapadokya örneği

Abstract

Bu araştırmada; gastronomik tatmin, hatırda kalıcı gastronomi deneyimi ve davranışsal niyet arasındaki ön görülen ilişkide destinasyon tatmininin aracılık rolünü incelemek amaçlanmaktadır. Bu kapsamda araştırma verisi, 1 Haziran 2021 ile 20 Aralık 2021 tarihleri arasında Kapadokya bölgesinde yemek deneyimi yaşamış turistlerden anket aracılığıyla yüz yüze şekilde toplanmıştır. Tesadüfi olmayan kolayda örneklem yöntemi kullanılarak 670 adet anket toplanmıştır. Hatalı, eksik veya birden fazla ifadenin işaretlenmiş olduğu anketler ve uç değere sahip anketlerin çıkarılmasından sonra 566 adet anket formu üzerinden analizler gerçekleştirilmiştir. Araştırma modelinde yer alan hipotezler, "Yapısal Eşitlik Modellemesi" ile test edilmiştir. Gerçekleştirilen analizler sonucunda elde edilen bulgulara göre, gastronomik tatminin hatırda kalıcı gastronomi deneyimi, davranışsal niyet ve destinasyon tatmini üzerinde pozitif ve anlamlı bir etkisi olduğu tespit edilmiştir. Hatırda kalıcı gastronomi deneyiminin, destinasyon tatmini üzerinde pozitif ve anlamlı bir etkisi olduğu tespit edilmiştir. Yine çalışma kapsamında destinasyon tatmininin davranışsal niyet üzerinde pozitif ve anlamlı bir etkisinin olduğu tespit edilmiştir. Ancak hatırda kalıcı gastronomi deneyiminin davranışsal niyet üzerinde herhangi bir etkisi saptanamamıştır. Destinasyon tatmini, gastronomik tatmin ile davranışsal niyet arasındaki ilişkide ve hatırda kalıcı gastronomi deneyimi ile davranışsal niyet arasındaki ilişkide kısmi aracılık rolü üstlenmektedir. Çalışma sonucunda elde edilen sonuçların, literatüre yönelik teorik katkılarına yer verilmiştir Ayrıca destinasyon yöneticilerine, paydaşlarına pratik öneriler sunulmuştur. Yine gelecek çalışmalar için araştırmacılara konu olabilecek çalışma önerileri geliştirilmiştir. Gerçekleştirilen literatür taraması kapsamında; ulusal ve uluslararası literatürde gastronomik tatmin, hatırda kalıcı gastronomi deneyimi, destinasyon tatmini ve davranışsal niyet değişkenlerini aynı anda ele alan herhangi bir çalışmaya rastlanılmamıştır. Bu bağlamda çalışma sonucunda elde edilen bulgular, orijinal olarak değerlendirilebilmekte ve literatüre katkı sağlaması beklenmektedir.

In this study, it is aimed to examine the mediating role of destination satisfaction in the predicted relationship between gastronomic satisfaction, memorable gastronomic experience and behavioral intention. In this context, research data were collected through a questionnaire from tourists who had a dining experience in the Cappadocia region between 1 June 2021 and 20 December 2021. In order to reach the tourists in the determined sample, non-random convenience sampling method was used. A total of 670 questionnaires were collected within the scope of the study. After removing the questionnaires in which incorrect, missing or more than one statement was marked and the questionnaires with extreme values, analyzes were carried out on 566 questionnaires. The hypotheses in the research model were tested with "Structural Equation Modeling". According to the findings obtained as a result of the analyzes carried out, it has been determined that gastronomic satisfaction has a positive and significant effect on memorable gastronomic experience, behavioral intention and destination satisfaction. It has been found within the scope of the study that the memorable gastronomic experience has a positive and significant effect on destination satisfaction. Another finding is that destination satisfaction has a positive and significant effect on behavioral intention. However, no effect of memorable gastronomic experience on behavioral intention was detected. As a result of the analyzes carried out, it has been determined that destination satisfaction plays a partial mediating role in the relationship between gastronomic satisfaction and behavioral intention, and in the relationship between memorable gastronomic experience and behavioral intention. The theoretical contributions of the results obtained as a result of the study to the literature are included and practical suggestions are made to the destination managers and stakeholders. Within the scope of the literature review, no study has been found in the national and international literature that simultaneously deals with the variables of gastronomic satisfaction, memorable gastronomic experience, destination satisfaction and behavioral intention. In this context, the findings obtained as a result of the study can be evaluated as original and it is hoped that it will contribute to the literature.
