Turist rehberlerinin yerel yemek kültürü bilgisinin tespit edilmesi: Nevşehir örneği

Abstract

Destinasyonların sahip olduğu doğal ve kültürel çekicilikler, turistlerin temel seyahat motivasyonlarını oluşturmaktadır. Bunun yanı sıra destinasyonların yerel kültürü de merak unsuru olabilmektedir. Ancak destinasyonun yerel kültürüne aşina olmadıkları için bu konuda en iyi desteği turist rehberlerinden almaktadırlar. Turist rehberleri destinasyon ile turist arasında bir aracı olarak destinasyondaki yerel yemeklerin deneyimlenmesine yardımcı olmaktadır. Turist rehberlerinin yemek kültürü hakkında uzmanlık eğitimi almasa da, mesleğinin gereği olarak hizmet verdiği bölgenin yemek kültürü konusunda bilgi sahibi olması beklenmektedir. Turist memnuniyetinin sağlanması ve destinasyona yönelik olumlu bir imajın oluşması için turist rehberlerinin yerel yemekleri bilmesi gerekmektedir. Bu da turist rehberlerinin yerel kültür ve yerel yemek konusunda bilgisinin önemini ortaya koymaktadır. Bu araştırmanın temel amacı Türkiye’nin en önemli destinasyonlarından biri olan Nevşehir’da hizmet veren turist rehberlerinin yerel yemek kültürü hakkındaki bilgisinin tespit edilmesidir. Bunun yanı sıra turist rehberlerinin yerel yemek kültürü ve yörenin yemek kültürü potansiyeline yönelik görüşlerinin alınması amaçlanmıştır. Bu amaçla Nevşehir’de en az 5 yıldır hizmet veren 9 turist rehberi ile görüşme gerçekleştirilmiştir. Görüşme verilerinin analizinde içerik analizi ve betimsel analiz yöntemlerinden yararlanılmıştır. Elde edilen bulgular doğrultusunda, turist rehberlerinin yerel yemek bilgisinin arttırılmasına ve buna yönelik düzenlenebilecek eğitimlere ilişkin öneriler sunulmuştur.

The natural and cultural attraction of the destinations constitutes the basic travel motivation of tourists. In addition, the local culture of destinations can be a curiosity for tourists. However, as they are not familiar with the local culture of the destination, they receive the best support from tourist guides. Tourist guides help to experience local dishes in the destination as a mediator between destinations and tourists. Even if tourist guides do not receive specialist training in food culture, they are expected to have knowledge about food culture of the region where they work as a requirement of their profession. Tourist guides need to know local dishes to ensure tourist satisfaction and to create a positive image for destinations. This shows the importance of knowledge of tourist guides on local culture and local food. The main purpose of this research is to determine the knowledge of tourist guides about local food culture in Nevsehir which is one of Turkey's most important destinations. In addition, it is aimed to get the opinions of the tourist guides about the local food culture and the food culture potential of the region. For this purpose, 9 tourist guides working in the Nevsehir for at least 5 years were interviewed. Content analysis and descriptive analysis methods were used in the analysis of interview data. In line with the findings, suggestions were given to increase the local food knowledge of tourist guides and trainings that could be organized for this purpose.
